For us one of the best bites of summer is fresh sweet corn! We are sharing 4 of our favorite corn dishes today in the blog!
Corn is a super-versatile ingredient that can be enjoyed a number of ways and is a staple for many food cultures dating back tens of thousands of years.
One of my favorite summer foods is corn on the cob. That super-fresh from the market flavor after a long day at the pool with friends and family. We try to recreate that feeling with each of our corn-inspired dishes!

Street Corn
This is our take on the super flavorful grilled corn that was historically found as a street food from vendor stalls and recently popularized by food trucks. This grilled corn is seasoned with just the right amount of heat of secret spices, then drizzled with a house-made creme fresh is a crowd-pleaser any time of the year.
Corn & Green Chili Casserole
Taking cues from our traditional Kentucky corn casserole and infusing some flavors from traditional Mexican cuisine - the Corn & Green Chili Casserole is warming side dish that is a perfect accompaniment for our Barbecue Station, Dijon Chicken, Ropa Vieja, and Taco Bar, just to name a few!
Kentucky Corn Succotash
Fresh and light, and so reminiscent of summer! Corn Salad is one of those dishes that is perfect for adding a punch of color to your plate with bright, flavorful, ingredients like cherry tomatoes, basil, red onions, lima beans, and feta cheese! Typically, Sweet Lilu's serves ours chilled, but it could just as easily be served as a hot dish to enjoy in chilly weather.
Grits
Being a Kentucky-based kitchen we know our way around grits. One of our favorite preparations is a sweet breakfast variation of lightly salted, creamed grits served with mixed berry compote, and a swirl of maple syrup and heavy cream. Our second favorite preparation is a coastal preparation: Lowcountry Shrimp & Grits - pairing house-made cheese grits with tender shrimp and a fire-roasted corn pan sauce.
Food is a tradition that we can all appreciate and it brings loved ones around the table. Book a consultation to talk about your "food vision" for your next event - and welcome to the sweet life!
